Milk โ paneer
Split milk with an acid, drain, press. That's the whole thing.
What you need
Whole milk
1 litre ยท full fat
Lemon
2 tbsp juice
Muslin cloth
+ colander, weight
Do this
Boil the milk ๐ฅ
Medium heat. Big lazy bubbles = ready.
Kill the heat, wait 30 seconds โธ
The "shivering point." Hot but not raging.
Add lemon, one tbsp at a time ๐
Stir gently. Stop when the whey turns clear yellow-green.
Rest 5 minutes ๐ง
Curds firm up. Don't stir.
Strain through muslin ๐ง
Save the whey โ knead into roti dough, water your plants.
Rinse with cold water ๐ฟ
Washes off residual acid. Skip this โ sour paneer.
Twist, press, wait โ
Cubes โ 30 min under 2 kg. Grilling โ 2 hours. Bhurji โ skip pressing.
Choose your acid
Lemon
Softest texture. Slight citrus note. My default.
White vinegar
Firmer. Cleaner flavour. Best for grilling.
Old whey
Traditional. Softer curds. Zero waste.
If something goes wrong
Milk didn't split
Add another tablespoon of acid. If it still won't budge โ milk is ultra-pasteurized; try a fresher brand next time.
Paneer is rubbery
You skipped the rinse or pressed too hard. Ease off next time.
Tastes sour
Too much acid. Rinse the curds better and stop the moment whey turns clear.
